Julien PLANCHON's passion for cheese led him to become a cheesemonger. He is constantly inspired by his love of local produce and is happy to be its ambassador. Julien PLANCHON is continually rethinking his cheese-based creations. Tricorne de Picardie takes its name from its shape (it looks like a popular 18th century hat, triangular with the brim turned up towards the crown to form three corners) and its three creators. Picardy cheese made from cow's milk, with a soft paste, strong aroma that develops over time, delicate taste. It is matured for six weeks in a damp cellar, its rind washed with strong dark ale. Poppy is a cheese made from cow's milk with a delicately flavoured poppy jelly at its centre. Poppies are symbols of the blood shed by soldiers in the First World War but also of nature's rebirth when spring arrives. This cheese was created to mark Anzac day. As part of his own daily battle to defend taste, Julien Planchon wanted to pay his own tribute to these innocent men struck down in the prime of their young manhood. Given his roots, common sense and realistic view of the world, he makes even greater efforts to work with producers and restaurant owners , in a creative and innovative way, constantly seeking to please customers.
